Borwick’s Bicarbonate of Soda (Sodium bicarbonate) is mainly used in cooking and baking, where it reacts with other components to release carbon dioxide, giving cakes etc that ‘light as a feather’ appearance. It can be used as a substitute for baking powder providing there is another reactant present. Often vinegar or lemon juice is used to help the process.
